Our Out-Of-The-Fridge Dinner

OLYMPUS DIGITAL CAMERA Yeah, I know.  I’m incapable of posting an egg recipe once a week.  My bad.

I SHOULD have taken food pictures on Friday night when our happy hour group – nine of us in all – came back to our house on the spur of the moment to continue the happiness with huevos rancheros and dancing in the kitchen. Eighteen eggs made-to-order, two on top of each steaming stack of tortilla, refried beans, chopped white onion, salsa and cheese.  It was awesome.

However, the photos…they might have come out a tad blurry.  Did I mention the margaritas?

ANYWAY…

We’ve been eating leftovers from our party the previous Sunday.  Every night.  I’m not going to the grocery store until the fridge is stone cold empty.  This is not to say we’ve been eating poorly, however.

Here we have last night’s plate of goodness.  All ingredients dug out of the fridge or freezer, most purchased for the party.

Lordy it was good.

Frozen broccoli, tossed with olive oil, salt and pepper and roasted at 400 degrees until crispy on the edges.

Whole grain bread from Costco sliced thick, slathered with olive oil and toasted.  Topped with caramelized onion/red bell pepper mixture.  Topped with smoked mozzarella.  Stuck under the broiler until bubbly.  Topped with a fried egg.

I don’t know what I did before I had chickens.  It would have been good without the egg, I’m sure.  But it wouldn’t have made Very Excellent Husband Don swoon, which he did.
